Description

The strangozzi are a typical agricultural and food product from Umbria, but it is also widespread throughout central Italy and was originally a "poor" product of the peasant tradition of the time. The elongated pasta with a square or rectangular cross-section is still made today from a simple mixture of wheat flour and water, with the addition of salt if necessary. According to tradition, the curious name is due to the resemblance to the shoelaces of Pontifical period shoes used by robbers to ambush clergymen (hence the variants "Strozzapreti" or "Strangolapreti").
